Spaghetti Carbonara!

I got a really powerful urge to make my second favourite meal (my favourite is macaroni cheese!) ever in the world and that is the delicious Spaghetti Carbonara!
I cannot take the misery of a badly cooked carbonara, it’s one of those little things in life, like a bath that’s too cold! 😦
So I researched a fair few different Italian recipes and came up with my own!

So firstly boil up some spaghetti in salted water until al dente! I will leave amounts up to you depending on how many you’re cooking for! Just increase or decrease the eggs, bacon and Parmesan!
Meanwhile get some pancetta or smoked bacon cubes frying until they’re
crisp.
In a bowl mix 1 whole egg and 2 egg yolks together, add a splash of cream and a huge handful of freshly grated Parmesan! Season with a little pepper but go easy on the salt as the bacon cubes are salty too! 🙂

When the pasta and bacon are done toss the steaming pasta into the bacon pan and coat with the delicious bacon bits and juices.
Next very quickly pour the creamy eggy mixture over the bacon-y pasta and mix very quickly ensuring everything is coated!
The heat in the pan and pasta will cook the eggs!
Sprinkle over yet more Parmesan and dig in to the scrumtiousness!
